Lets face it, life is hard for a vegetarian in today's culture. I live in America where fast food meat is pushed in your face at every opportunity and not many places have any good vegetarian alternatives.
That meat comes from animals who aren't always treated kindly before slaughter. Most of the chicken in our stores came from chickens raised in cages not much bigger than their bodies, or piled on top of one another in factories, and for all of their roughly month and a half long life they stay there without human contact or even being able to move around. Now, I don't care that most people eat meat but I do care about the way those animals are treated. It just isn't humane.
So, in my household we don't eat meat. We've been vegetarian for a couple months now and I'm happy to say that my husband's cholesterol and blood pressure went from dangerously high to normal without having to use medication! I've also noticed an improvement in my energy levels and moods since the switch and I couldn't be happier with our new lifestyle. But still, the issue of never having anything tasty to eat on hand persists.
Whats with microwave meal companies never selling any good veggie alternatives anyway?
So my solution is to find as many yummy delicious vegetarian "'Make-Ahead Meals" as possible so I always have something good in the freezer that can be warmed up and on my plate in a matter of minutes. And its better for you than the crap sold in stores anyway!
